Thankgiving Break

I took a week off of taste-testing in my kitchen. We were busy preparing for Thanksgiving and Christmas shopping that it left no time to be on Pinterest. Check back next week to see what I have cooked up!

Baked Whole Wheat Blueberry Donuts w/ Lemon Glaze

It's no secret donuts are one of my favorite treats. Dunkin Donuts has this new red velvet cake donut with cream cheese drizzle that is to die for. My mouth is salivating just thinking about them. Normally Sunday mornings are our day to indulge a little and my husband makes a run for a dozen and iced coffees. I ran acrossed this recipe for Whole Wheat Blueberry Donuts and decided to try them instead of our usual Dunkin Donuts.

I generally have blueberries on hand so they were a good choice for fruit, but I'm sure you could use strawberries, raspberries or any other berry you fancy. My twins eat so many blueberries that I keep telling them they are going to turn inot a blueberry like that girl from Charlie and the Chocolate Factory. This is usually where I get all sorts of laughter from them. Anyway, back to these blueberry donuts.

I love the fact that they are baked and not fried. Ummm, hello? Can we say fewer calories? I think so!

I was afraid they were going to taste like cardboard being whole wheat and all. I was delightfully surprised though. They were actually pretty good.

I wish I could say they were a big hit with my family, but unfortunately not everything I enjoy goes over well with them. My daughter did not like the glaze and my oldest son only ate half of his. This is just going to be one of those recipes that I will only make every so often since I was the only one who really liked them.

Mexican Stuffed Shells

Ahh, Tuesday again. Welcome back! This week my Pinterest pick is Mexican Stuffed Shells. My family loves stuffed shells and tacos so when I found this recipe I thought it would be something out of the ordinary that mixed those two things. They were a little time consuming to make. You have to make sure the meat is cool enough to handle. I made the mistake of not waiting and burned my fingers trying to stuff them.

Stuffing them was messy, messy, messy; as you can see in my attempt to prepare a pan of them. Cover with foil and bake in a 350 degree oven for 30 minutes.

Top the whole thing with cheese and pop them in the oven for an additional 10-15 minutes.

The finished product.... I garnished mine with sour cream and black olives. Don't they look yummy?

I can now see why this recipe has been pinned over and over again. IT'S DELICIOUS! My husband even made the comment that of all the recipes I have tried this is the best one and he wants this to be part of our normal menu from now on. Now you know it's good when my husband says he likes it. He is usually really picky about what he really likes. Thank you Maeghan at The Way To His Heart....... for the great recipe. This one has made it's place into my recipe box!

Tuscan Pasta with Tomato-Basil Cream

Well it's Tuesday again and here is the second recipe as promised, Tuscan Pasta with Tomato-Basil Cream. This was a super easy recipe. I love easy! And my family loved it, even my picky husband. I  tend not to tell him where I got a recipe from...once he hears Pinterest, he gets that look of "what are you feeding us now?" on his face.

All I had to do to prep was boil some water and dice some tomatoes. See I told you, EASY!

Like the original recipe states, I used Classico Sun-Dried Tomato Alfredo sauce.

While the raviolis were cooking, I heated the rest of the ingredients in a medium sized sauce pan.

Once the raviolis were cooked and the sauce was ready, I poured the sauce over the raviolis and served with some garlic bread.

Since this recipe was so easy and my entire family loved it.....

Crockpot Chicken Tacos

If you know me then you know how much I love to use my crockpot. I mean who doesn't love to dump everything all together and leave it to cook all by itself. So when I came across this recipe I couldn't resist trying it. Tacos are one of our most popular favorites in my household. I have never made them with chicken though. I figured it was time for a change-up to our norm.

Not only were they delish, but super easy to make! An added bonus to a great recipe was my ENTIRE family loved them. They were a bit messy due to the juices from the chicken. That's ok though....we enjoyed every messy bit.

Thank you Sarah at Chocolate Therapy for posting the great recipe!
